– Rose Levy Beranbaum on Ciabatta de Donna in The Bread Bible, the most fantastic bread cook book I’ve yet seen. It’s rare to find a cook book that not only shows reverence for the food, but for the chemistry behind the food. It’s rarer still to find a cook book that one actually wants to read beyond mechanically copying the recipes from the pages.
